Ingredients
- 3 ripe bananas
- ¼ cup coconut oil
- 1 cup Splenda
- 2 egg whites
- 1 teaspoon vanilla
- ½ cup quick oats
- ¼ cup unsweetened coconut flakes
- ¾ cup whole wheat flour
- 1 teaspoon salt
- 2 teaspoons baking powder
Instructions
- Preheat oven to 375 degrees.
- Line muffin tin with cupcake liners.
- In a large bowl, beat together bananas, coconut oil, eggs, and vanilla until smooth.
- Mix in sugar and oats.
- Sift flour, salt, and baking powder into the wet mixture. Fold until just moistened.
- Fill muffin tins ¾ way full.
- Bake at 375 for 15-17 minutes or until golden brown and toothpick inserted into muffin comes out clean.
