Creamy Garlic Mushrooms

These creamy garlic mushrooms come together in just 20 minutes and taste like a million bucks. A must make side dish that is sure to wow your guests!

Ingredients

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 8 cloves of garlic, minced
  • 8 oz whole baby bella mushrooms
  • ⅓ cup heavy cream
  • 2 tablespoons cream cheese, softened
  • ⅓ cup fresh grated parmesan cheese
  • ¼ teaspoon onion powder
  • ¾ teaspoon dried oregano
  • salt and pepper, to taste
  • fresh parsley, to garnish

Instructions

  1. Rinse and clean the mushrooms and pat dry
  2. melt butter and olive oil in a skillet over medium heat
  3. Add mushrooms and cook until browned, around 5 – 7 minutes
  4. Add garlic, cream, cream cheese, parmesan, onion powder, and oregano and cook for 5 – 10 minutes, until sauce is thick and creamy
  5. Salt and pepper to taste
  6. Garnish with fresh parsley and serve

Ingredients

  • ▢3 large boneless, skinless chicken breasts
  • ▢1 jalapeno finely diced
  • ▢1/2 teaspoon Seasoned salt
  • ▢1 container chive whipped cream cheese
  • ▢1/2 cup shredded cheddar cheese
  • ▢12 slices bacon

Instructions

  • Preheat oven to 375 degrees.
  • Cut each chicken breast horizontally into 2 thin pieces. Pound each chicken piece to flatten.
  • Place jalapeno in a small microwave-safe bowl. Cover with plastic wrap and microwave on high for 45 seconds
  • Season both sides of chicken lightly with seasoned salt.
  • Spread one side of each piece of chicken with 1 heaping tablespoon of whipped cream cheese.
  • Divide the jalapeno and cheddar cheese evenly, sprinkling on top of cream cheese.
  • Roll each piece of chicken up. Wrap 2 pieces of bacon around each chicken roll. Secure with toothpicks.
  • Place in a baking dish. Bake for 30 minutes.
  • Turn broiler on and broil chicken for about 3 minutes to crisp the bacon. Flip chicken over and broil another 3 minutes to crisp the bottom.

Lemon Herb Roasted Potatoes

Lemon Herb Roasted Potatoes – BEST roasted potatoes you’ll ever make, loaded with butter, lemon, garlic and herb. 15 mins active time! 

Ingredients

  • 1 lb. (0.4 kg) baby potatoes

Oil Mixture:

  • 1/4 cup olive oil
  • 2 tablespoons melted butter
  • 3 cloves garlic, minced
  • 1 tablespoon chopped Italian parsley leaves
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 3 dashes ground black pepper

Instructions

  1. Preheat oven to 350°F (176°C). Cut slits on the potatoes, do not cut through. Mix all ingredients in the Oil Mixture together.
  2. Place the potatoes in a roasting pan and brush with the Oil Mixture. Make sure to brush inside the slits of the potatoes. Save some for basting.
  3. Roast the potato for 1 hour, basting the oil mixture at 30 minute interval using the remaining Oil Mixture. Serve immediately after roasting.

Garlic Parmesan Roasted Carrot

One of the best carrot recipes is oven roasted carrots with garlic butter and Parmesan cheese. This savory roasted carrots recipe is easy, healthy and great for kids!

Ingredients

  • 12 oz. (340 g) carrot, skin peeled
  • 2 tablespoons melted salted butter
  • 2 cloves garlic, minced
  • 3 tablespoons grated Parmesan cheese
  • 1 teaspoon chopped parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Mix the melted butter and garlic together. Coat the carrots well with the garlic butter mixture.
  3. Arrange the carrots on a baking sheet lined with parchment paper. Drizzle the extra garlic butter mixture on top of the carrots. Roast for 15 minutes, then top the carrots with the Parmesan cheese.
  4. Roast for another 10 minutes or until the cheese melts and slightly browned. Remove from the oven and top with the parsley. Serve immediately.

Roast Chicken Recipe

Simple Roast Chicken flavored with garlic, butter and herbs, then oven roasted to a golden, crispy, and juicy perfection! 

INGREDIENTS 

  • ▢3 to 3-1/2 pound whole broiler-fryer chicken
  • ▢3 tablespoons butter, melted
  • ▢3 cloves garlic, minced
  • ▢3/4 teaspoon salt, or to taste
  • ▢1 teaspoon dried basil
  • ▢1/2 teaspoon dried thyme
  • ▢1/4 teaspoon lemon pepper seasoning, or you can also use fresh ground black pepper
  • ▢1 lemon, quartered
  • ▢3 fresh rosemary sprigs
  • ▢4 cloves garlic, peeled

INSTRUCTIONS 

  • Preheat oven to 450˚F.
  • Remove giblets from inside of the chicken’s cavity.
  • Thoroughly dry the chicken with paper towels.
  • Place chicken, breast side UP, on a rack set over a shallow roasting pan or jelly roll pan.
  • Brush chicken with melted butter.
  • Sprinkle or rub minced garlic all over chicken.
  • In a small bowl combine salt, basil, thyme, and lemon pepper; rub onto the chicken.
  • Add some salt to the inside of the cavity and fill the cavity with lemon slices, rosemary, and garlic cloves.
  • Tie the legs together with kitchen twine, and tuck the wings under the body of the chicken.
  • Roast, uncovered, for 10 minutes.
  • Reduce oven temperature to 350˚F and continue to cook until done; about 1 more hour and 10 minutes, or until internal temperature of chicken reaches 165˚F.
  • Remove from oven and baste the chicken with the juices.
  • Let rest for about 15 to 20 minutes before cutting.

Cheesy Christmas Tree Bread

Cheesy Christmas Tree Bread from refrigerated pizza dough. Warm, pull apart bread loaded with herby garlic butter and plenty of cheese. Dip in marinara or pesto for the ultimate appetizer or side dish.

Ingredients

  • 13 ounce canned refrigerator pizza dough
  • parchment paper for lining baking sheet
  • 6-7 mozzarella cheese sticks
  • 1 large egg + 1 tablespoon water for egg wash
  • 3 tablespoons butter melted
  • 1/2 cup grated parmesan cheese divided
  • 1 tablespoon fresh parsley finely chopped
  • 1/2 tablespoon fresh rosemary finely chopped
  • 1/2 tablespoon fresh basil finely chopped
  • 1 clove garlic grated
  • 1 jar marinara and/or pesto for dipping

Instructions

  • Preheat the oven to 400° then line a baking sheet with parchment paper. 
  • Cut the dough into 30 approximately equal squares then cut the mozzarella cheese sticks into 30 bite size pieces.
  • Add a piece of mozzarella to each square of dough then form a ball, rolling with your hands to smooth and seal the edges.
  • Place the balls on the prepared baking sheet seam side down in the shape of a tree (see photos) – so the balls are touching. Blend the egg and water in a small bowl and lightly brush each ball with the egg wash.
  • Bake 16-18 minutes or until golden brown. While the bread is baking, microwave the butter until melted then stir in half of the parmesan cheese and all of the grated garlic and herbs. Brush onto the rolls, then sprinkle with the remaining parmesan cheese over the top then serve right away with marinara and/or pesto for dipping.

Roasted Garlic Mashed Potatoes

These Roasted Garlic Mashed Potatoes will quickly become a dinner staple! They’re deliciously buttery and creamy and that roasted garlic flavor just takes them over the top! Plus only basic everyday ingredients are needed for this comforting side dish.

Ingredients

  • 2 medium garlic heads
  • 2 tsp olive oil
  • 2 1/2 lbs unpeeled red potatoes, diced into quarters (or sixths if larger)
  • Salt and freshly ground black pepper
  • 1/2 cup milk (anything but skim)
  • 1/4 cup heavy cream
  • 1/4 cup butter, diced into 1 Tbsp pieces, plus more for serving
  • Chopped fresh parsley, for garnish (optional)

Instructions

  • Preheat oven, prep garlic: Preheat oven to 400 degrees F. Cut garlic heads about 1/2-inch from the top to expose cloves. 
  • Roast garlic: Transfer garlic heads to a sheet of foil, drizzle 1 tsp oil over each head, wrap foil tightly around garlic so it’s fully covered. Roast in preheated oven until lightly golden and cloves are soft, about 40 – 45 minutes.
  • Mash garlic: Remove from oven and let cool (cook potatoes while they cool) then press and pinch cloves out of peels into a small bowl. Mash cloves with a fork and set aside.
  • Cook the potatoes: Place potatoes in a large enameled cast iron pot and add enough cold water to cover potatoes, sprinkle in 1 Tbsp salt. Bring water to a boil over medium-high heat, then cover with lid, reduce heat to medium-low and allow to boil until potatoes are very tender when pierced with a fork, about 20 minutes. 
  • Heat milk, cream and butter: Near the end of potatoes cooking, measure out milk in a liquid measuring cup, add cream and butter. Heat in microwave until hot, about 45 – 60 seconds. 
  • Drain and mash potatoes: Drain potatoes then return to pot and mash with a potato masher (they should have some lumps in them). 
  • Stir in milk mixture and garlic: Add hot milk mixture and mashed roasted garlic, and stir with a spoon while seasoning with salt and pepper to taste. Serve immediately with more butter and garnish with parsley if desired.

GARLIC BUTTER PROSCIUTTO WRAPPED ASPARAGUS

Garlic Butter Prosciutto Wrapped Asparagus are simple and quick to make. The ultimate finger food, side dish or appetiser!

INGREDIENTS

  • 2 tablespoons unsalted butter of your choice , melted
  • 2 teaspoons minced garlic
  • 16 asparagus spears , woody ends snapped off and discarded

INSTRUCTIONS

  • Melt butter; add the garlic and mix together. Brush the butter mixture over each asparagus spear, coating evenly. Slice easy prosciutto slice in half lengthways. Wrap each asparagus spear starting on a diagonal angle from the top, gently and reasonably tightly, to the bottom.

Oven Method:

  • Preheat grill / broiler on high heat. Lightly grease a baking sheet / tray with cooking oil spray.. Arrange the wrapped spears in a single layer on the baking sheet / tray; season with cracked pepper (do not add salt if the prosciutto is already salty enough) and grill / broil for about 4-5 minutes (keeping an eye on them as you don’t want anything to burn), or until the asparagus is bright green, cooked to your liking, and the prosciutto is crispy. Serve immediately.

Grill Method:

  • Preheat a barbecue grill or grill pan on high heat. Grill the butter brushed and prosciutto wrapped asparagus, turning occasionally, for 3-4 minutes or until the asparagus is bright green and tender crisp, and the prosciutto is crispy. Serve immediately.

Pan Fried Method:

  • Heat 2 teaspoons of oil in a frying pan or skillet over medium heat until hot. Fry wrapped asparagus spears for 1-2 minutes on each side or until prosciutto is crisped and browned.

Sausage Balls

This sausage balls recipe is a blend of pork sausage, cheddar cheese, bisquick and seasonings, all formed into balls and baked to golden brown perfection. A classic appetizer recipe that’s great for feeding a crowd! 

INGREDIENTS

  • 2 16 ounce rolls pork sausage such as Jimmy Dean
  • 1 1/2 cups all purpose baking mix such as Bisquick
  • 4 cups shredded cheddar cheese
  • 1/4 cup onion finely grated
  • 1 teaspoon minced garlic
  • 1/4 cup milk
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped parsley
  • cooking spray

INSTRUCTIONS

  • Preheat the oven to 375 degrees F. Coat a rimmed sheet pan with cooking spray.
  • Place the sausage, baking mix, cheese, onion, garlic, milk and black pepper in a bowl; stir until thoroughly combined. A stand mixers works great for this!
  • Roll the meat mixture into 1 inch balls and place on the baking sheet. Bake for 20-25 minutes or until browned. Sprinkle with parsley then serve immediately with a dipping sauce of your choice.

Brown Sugar Dijon Glazed Pork Loin with Carrots, Apples and Sweet Potatoes

This brown sugar Dijon mustard glazed pork loin with carrots, apples and sweet potatoes is an excellent choice for a Sunday dinner or a holiday meal. Carrots and potatoes are caramelized in brown sugar and so is the top of the roast, generously coated with Dijon mustard and dark brown sugar.

 Ingredients

Meat:

  • 3 lb. pork loin

Vegetables:

  • 1 lb carrots, cut in strips
  • 2 granny smith apples (optional), peeled, cored and sliced thickly
  • 2 sweet potatoes, peeled and sliced lengthwise
  • 2 tablespoon olive oil
  • ⅓ cup dark brown sugar, (such as Wholesome Dark Brown Sugar)

Spices:

  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning, (optional)

Glaze:

  • 3 tablespoon Dijon mustard, (creamy and thick, such as Maille Dijon Mustard)
  • ½ cup brown sugar

Garnish

  • 1 tablespoon parsley, (chopped, for decoration)

Instructions

  • Cut carrots and sweet potatoes lengthwise. Add them to the bowl, add 2 tablespoons olive oil and mix well.
  • Slice peeled apples – but place them in a different bowl to be added later (optional step).
  • Place pork loin with fat layer on top in the middle of the baking sheet. Surround it with oiled up carrots and sweet potatoes. Do not add brown sugar or apples yet. My picture shows apples, but I took them out of the pan and added them after 30 minutes in the oven.
  • Season the pork loin and vegetables with spices evenly: 1 teaspoon sea salt, ½ teaspoon black pepper, 1 teaspoon Italian seasoning (optional)
  • Generously brush the entire surface of the pork loin (except bottom) with Dijon mustard – 3 tablespoons. If your pork loin is smaller, use less.
  • Press ½ cup of dark brown sugar into the mustard, all over the roast.
  • Place the baking sheet in the oven and cook at 375 degrees F. Take it out after 30 minutes and sprinkle the veggies with ⅓ cup of brown sugar.
  • Adding apples (optional step): Add sliced apples at this point.
  • Return the roast to the oven and continue cooking for about 20-30 more minutes or until the internal temperature hits between 145 (pink roast) to 155 degrees F (white roast) on a meat thermometer. The total cooking time for the roast of this size ends up being 50 minutes to 1 hour and that does not include resting time of 10 minutes! See below.
  • Important! Keep in mind that large cuts like this pork loin increase in temperature approximately 10° F. while resting. Which means that if you are aiming for 160 F, remove them from the heat at 150° F. followed by a 10 minute rest.
  • Let the roast rest for 10 minutes before carving and serving. Once again, remove it prior to desired target temperature to avoid the pork drying out. 
  • The pork will continue “cooking” while resting. This will also allow the juices in the meat to settle down and stay in the meat when you slice it.

Roasted Mushrooms in a Browned Butter, Garlic and Thyme Sauce

Roasted mushrooms tossed in a tasty browned butter, garlic and thyme sauce!

ingredients
  • 1 pound mushrooms (button, cremini, or other), cleaned
  • 1 tablespoon oil
  • salt and pepper to taste
  • 1/4 cup butter
  • 2 cloves garlic, chopped
  • 1 teaspoon thyme, chopped
  • 1 tablespoon lemon juice
  • salt and pepper to taste
directions
  1. Toss the mushrooms in the oil, salt and pepper, place on a baking sheet in a single layer and roast in a preheated 400F/200C oven until they start to caramelize, about 20 minutes, mixing half way through.
  2. Cook the butter over medium heat until it starts to turn a nice hazelnut brown, remove from heat and mix in the garlic, thyme and lemon juice.
  3. Toss the roasted mushrooms in the browned butter and season with salt and pepper to taste!
