Ingredients
SWEET POTATO BREAD:
- 1¾ cups all-purpose flour
- 2 teaspoons pumpkin pie spice
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 large eggs, beaten
- 1 8oz. can crushed pineapple, drained
- 1 cup pumpkin
- 1 cup grated sweet potato
- ¾ cup light brown sugar
- ½ teaspoon ground ginger
- ¼ cup vegetable oil
MAPLE GLAZE:
- 4 oz. cream cheese, softened
- ¼ cup milk
- 6 Tablespoons powdered sugar
- 1 Tablespoon maple syrup
Instructions
- Preheat oven to 350F degrees. Spray a 9×5 inch loaf pan with cooking spray.
- In a large bowl, whisk together flour, pumpkin pie spice, baking powder, baking soda, and salt.
- In a medium bowl, mix eggs, pineapple, pumpkin, sweet potato, brown sugar, and ginger together.
- Add pumpkin mixture to the dry ingredients and stir until combined. Add oil, stirring to combine. Spoon into prepared pan.
- Bake for 55 minutes – 1 hour. Let cool completely on a wire rack.
- MAPLE GLAZE:
- In a medium bowl, which cream cheese until smooth. Gradually add milk. Add powdered sugar and maple syrup, whisking until smooth. Drizzle on top of cooled bread. Sprinkle with chopped pecans.
