ONE CRUST FRESH PEACH PIE

In the South, sweet tea and southern hospitality are plentiful anytime of the year, but sweet, ripe peaches are only around in the summertime, making peach pie a family favorite. This peach pie recipe is so simple to make. It does not require stove-top cooking and it only uses fresh peaches, no fillers made of gelatin or cornstarch. If you like the taste of pure, fresh peaches for a natural flavor, give this recipe a try. Be sure to head to your local farmer’s market for the best locally grown fruit.

Ingredients:

10 to 12 fresh peaches, peeled and thinly sliced
1 ½ cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 dash salt
1 tsp. vanilla
3 Tbsp. flour
2 Tbsp. butter (cut into pieces)
1 ready made pie crust (I use Pillsbury)

Directions:

Fold all ingredients (except crust) together and pour into 9 X 13 baking dish. Dot the 2 Tbsp. butter (cut into small pieces) evenly throughout the mixture. Place pie crust on top of filling and seal to edges of dish. Cut a few decorative slits to vent in the top crust. Bake at 400 degrees for 15 minutes and then turn oven down to 350 and bake for another 30 to 40 minutes until golden. Serve with whipped cream or vanilla ice cream.
