Hot Spinach Dip

ingredients:

1 pkg. (8oz.) Challenge cream cheese, room temperature

1 cup sour cream

1 (10 oz.) package frozen chopped spinach, thawed & drained of excess water

3/4 cup freshly grated Parmesan cheese

1 cup grated pepper jack cheese

1 cup grated mozzarella cheese

1 1/2 teaspoons garlic powder

1/2 teaspoon salt

1/4 teaspoon pepper

1/4 cup freshly diced tomato (optional)

 

Fresh bread, chips, crackers or raw veggies (for dipping)

directions:

  1. Preheat oven to 350°F.
  2. In a large bowl, add all ingredients except tomatoes and stir well to combine.  The cream cheese needs to be room temperature if you are stirring the ingredients by hand.
  3. Spread dip into an oven safe dish, cover with foil (or lid) and bake at 350°F for 15-20 minutes, or until melted and warm throughout.
  4. Top with diced tomatoes (if desired).  I like to add the tomatoes after the dip is baked, but you are welcome to add them before if you like.
  5. Enjoy dip with fresh bread, chips, crackers or raw veggies.
