Ingredients
1 1⁄2 cup all-purpose flour |
3⁄4 tsp baking powder |
1⁄2 tsp baking soda |
1⁄8 tsp salt |
1 tsp ground cinnamon |
3⁄4 tsp ground allspice |
1⁄2 tsp ground nutmeg |
1⁄2 tsp ground cloves |
2 large egg |
1⁄4 cup white sugar |
2 tbsp canola oil |
1⁄2 cup honey, dark, if possible |
1⁄2 cup applesauce |
1 tsp orange or lemon zest, grated |
1⁄4 cup sliced almonds |
Directions
- Preheat oven to 350 degrees F (175 degrees C). Spray a loaf pan with nonstick cooking spray.
- In a large bowl, combine flour, baking powder, baking soda, salt, cinnamon, allspice, nutmeg, and cloves and set aside. In a separate large bowl, beat eggs with an electric mixer until frothy. Add sugar, oil, and honey and beat until the mixture is pale yellow. Stir in applesauce and orange or lemon zest. Slowly add dry ingredients to the wet ingredients until just combined. Place batter in the prepared pan and sprinkle the top with almonds.
- Bake in the middle of the oven for 35 to 40 minutes or until a toothpick inserted into the center of the cake comes out clean. Cool in the pan for 15 to 20 minutes, then transfer to a wire rack to cool completely.
