Cheesy-Baked Corned Beef Hash Tartines

Ingredients
  • Sourdough bread cut into thick slices
  • 1 can (7.5 oz) corned beef hash (enough for 4 slices)
  • 2 tbsp Eggbeaters or eggs scrambled with fork (per slice)
  • 1 tsp chopped onion (per slice)
  • 4 pickled jalapeno slices (per slice)
  • 2 tbsp four state cheddar cheese (per slice)
Instructions
  1. Saute corned beef hash in pan until browned and crispy. Set aside.
  2. Cut sourdough bread into ¾-inch slices. Lay on baking sheet.
  3. Spoon corned beef hash onto bread leaving a well in the center.
  4. Spoon eggs into the well.
  5. Top with onion and jalapeno slices.
  6. Bake at 350 degrees for 15 minutes or until eggs are cooked.
  7. Sprinkle cheese on top. Broil until cheese melts and bubbles, about 2 minutes.
