Ingredients
- 1 lb boneless, skinless chicken breast, four 4 oz halves
- 1⁄2 tsp sea salt
- 1⁄4 tsp black pepper, freshly ground
- 1 tsp olive oil
- 2 tsp fresh lemon juice, or to taste
- 2 tsp fresh rosemary, chopped
- 2 tsp fresh parsley, chopped
- 1⁄4 cup chicken broth
- 1 medium lemon, quartered, for garnish (optional)
Directions
- Preheat oven to 400 degrees F (200 degrees C).
- Season both sides of chicken with sea salt and black pepper. Place in a small, shallow roasting pan and drizzle with olive oil. Sprinkle with lemon juice, rosemary, and parsley. Pour broth around the chicken to coat the bottom of the pan.
- Bake for 30 to 35 minutes or until the chicken is cooked through. Garnish with fresh lemon, if desired.
