Ingredients:
- 1 lb (450g) sausage links (you can use any type of sausage you like, such as Italian sausage, chicken sausage, or pork sausage)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped (any color you prefer)
- 1 can (14 oz / 400g) diced tomatoes
- 1 can (14 oz / 400g) white beans (such as cannellini beans), drained and rinsed
- 1 cup chicken or vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Olive oil for cooking
- Grated cheese (optional, for topping)
Instructions:
- Preheat your oven to 375°F (190°C).
- Heat a tablespoon of olive oil in a large skillet over medium heat. Add the sausage links and cook until browned on all sides. Remove the sausages from the skillet and set them aside.
- In the same skillet, add a bit more olive oil if needed, then add the chopped onion, minced garlic, and chopped bell pepper. Sauté until the vegetables are softened and fragrant.
- Stir in the diced tomatoes (with their juices), drained white beans, chicken or vegetable broth, dried oregano, dried basil, salt, and pepper. Mix well to combine.
- Cut the browned sausage links into bite-sized pieces and add them back to the skillet with the vegetable and bean mixture. Stir to distribute the sausage evenly.
- Transfer the mixture to a greased casserole dish. If you like, you can sprinkle some grated cheese on top for extra flavor.
- Cover the casserole dish with foil and bake in the preheated oven for about 25-30 minutes, or until the casserole is hot and bubbly.
- Remove the foil and broil for an additional 2-3 minutes to lightly brown the top.
- Serve the sausage casserole hot, either as is or with a side of crusty bread or a simple green salad.
