A Simple and Delicious Sausage Casserole

Ingredients:

  • 1 lb (450g) sausage links (you can use any type of sausage you like, such as Italian sausage, chicken sausage, or pork sausage)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped (any color you prefer)
  • 1 can (14 oz / 400g) diced tomatoes
  • 1 can (14 oz / 400g) white beans (such as cannellini beans), drained and rinsed
  • 1 cup chicken or vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil for cooking
  • Grated cheese (optional, for topping)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Heat a tablespoon of olive oil in a large skillet over medium heat. Add the sausage links and cook until browned on all sides. Remove the sausages from the skillet and set them aside.
  3. In the same skillet, add a bit more olive oil if needed, then add the chopped onion, minced garlic, and chopped bell pepper. Sauté until the vegetables are softened and fragrant.
  4. Stir in the diced tomatoes (with their juices), drained white beans, chicken or vegetable broth, dried oregano, dried basil, salt, and pepper. Mix well to combine.
  5. Cut the browned sausage links into bite-sized pieces and add them back to the skillet with the vegetable and bean mixture. Stir to distribute the sausage evenly.
  6. Transfer the mixture to a greased casserole dish. If you like, you can sprinkle some grated cheese on top for extra flavor.
  7. Cover the casserole dish with foil and bake in the preheated oven for about 25-30 minutes, or until the casserole is hot and bubbly.
  8. Remove the foil and broil for an additional 2-3 minutes to lightly brown the top.
  9. Serve the sausage casserole hot, either as is or with a side of crusty bread or a simple green salad.
