Ingredients:
8 strips bacon
¾ cup butter, room temperature
1 1/3 cup brown sugar
½ cup white sugar
2 ¼ cup flour
1 tsp baking soda
1 pinch salt
1 egg + 1 egg yolk
1 tbsp vanilla
2 cups chocolate chips
Instructions:
1. Preheat oven to 375.
2. Lay bacon strips out on a foil-lined baking sheet. Sprinkle 1/3 cup brown sugar on top, then bake until browned and crispy. Chop into small pieces and set aside.
3. In a medium mixing bowl, whisk together flour, baking soda and salt.
4. In a mixing bowl or electric mixer, add butter and remaining white and brown sugar. Mix until combined and fluffy, about 3 minutes. Add vanilla extract and eggs and mix until combined, then slowly incorporate dry mix into wet ingredients until combined.
5. Add bacon and chocolate chips, then fold into dough. Spoon 1 tbsp or so rounds of cookie dough onto greased baking sheet, being sure not to overcrowd.
6. Bake on 375 for 15 minutes. Eat them all by yourself.
